Almost everybody has some food put away. How many days does yours cover?

Our family got this wrong twice. Nick’s grandpa stacked a supply of C-rations in the basement during the Cold War, and years later they opened them up and threw the whole lot out. Then in the 90s we bought a year of freeze-dried food in 5-gallon buckets, and it sat in the corner because it wasn’t part of our meals and we didn’t much care for it.

Then Lisa tried one of those online food storage calculators. It handed her hundreds of pounds of wheat and buckets of rice, and she stood there knowing most of it would go stale in the basement before anyone ate it. The charts fail because everybody’s diet is different, and a 17-year-old boy and a 70-year-old lady don’t eat the same.

The food on your grocery shelf traveled somewhere in the neighborhood of 1,500 miles to get there, and the store only keeps a few days of stock on hand. In this class, we’ll show you how to size a real food supply out of the meals your family already eats.

The three levels we'll walk through

Store what you eat, and eat what you store. Everything below is built on that one sentence.

1. A real 2-week buffer

Two weeks of actual meals your family will eat, on hand. Lisa ran a test at Walmart and walked out with about 40 meals of rice and beans, 2 weeks of oats, and some pasta and sauce, for $49.77.

2. Scale it larger

Once you know what 2 weeks takes, a month, 3 months, or even a year is plain arithmetic. We’ll show you the multiplication, the buying order, and the rhythm that fills the shelves at whatever pace your budget allows.

3. Harvest to harvest

It’s what our great-grandparents did, and this is what we’d like to aim for. But how much garden space will it take?  We’ll give an example to illustrate, and you might be surprised!
